With just a few simple fresh ingredients, ordinary roast beef becomes extraordinary. The horseradish is an interesting base for the roast’s crusty coating, adding heat and zing. You reap its flavourful benefits in the vegetables and sauce, too, by having bits of the crust come off from the roast into the pan. You can use regular potatoes, sweet potatoes or a mix of both.
